Identification quantitative et qualitative des flavonoïdes de trois variétés de raisin de table cultivés sous un climat méditerranéen par HPLC-DAD

Abstract


Les flavonoïdes sont une classe des composés phytochimiques polyphénoliques la plus étudiée, en raison de l'importance relative de leur activité antioxydante et d'autres activités biologiques. Ils constituent une partie intégrante de l'alimentation humaine, et au cours des dernières années, plusieurs études ont généré des données analytiques sur le profil de flavonoïdes, ainsi que sur les facteurs qui peuvent l'affecter. Des extraits de pellicule de trois cultivars de raisin Vitis vinifera (Cardinal, Muscat blanc et Victoria)  cultivés à El-Tarf (NE Algérien) ont été analysés pour leur composition en flavonoïdes par HPLC-DAD. L'étude a révélé la présence de 19 composés appartenant aux groupes suivants: les flavonols et les anthocyanes.les résultats montrent que la quercétine 3-O-glucoside est le flavonol dominant (83.32%), alors que la péonidine 3 –O - glucoside est l’anthocyane dominante (66.77%).
