Abstract

As waste, the stale bread breaks serious problem for the inhabitants of the algiers suburbs. A survey of
the actors in the bread sector allows an analysis to be made. under strong guidance, the sector has
strengths, but cumulates weaknesses; today and in the face of a changing environment, serious threats
emerge. the paper attempts to demonstrate how the intelligent adoption of the provisions of the social
and circular economy by the population makes possible a real and better renewal of the sector in the
future.
